Creamy Pesto Reinvented, Oil-Free + Vegan

Pesto has long been one of my favorites. Unfortunately, pesto is filled with loads of oil and typically, parmesan cheese, turning what could be potentially healthy into a fat-laden, dairy-filled sauce of sadness. So, taking what I’ve learned from all of the creamy sauces that I’ve created with vegetables, I thought of combining my vegan cream sauce with my old basil pesto recipe, minus the oil and voila! I’ve got a pasta, pizza, salad, dipping everything sauce that is to-die-for delicious and full of the wonderful nutrients that support a healthy life! Yay!

I love this creamy pesto on zoodles, topped with baby tomatoes and sauteed mushrooms. You can drizzle over any dry-roasted veggies or use it as a pizza sauce. My kids want to eat it like a soup! It can be used as a sandwich spread or as a completely guilt-free salad dressing. Yesterday, I had a baby spring mix salad covered in Creamy Pesto and my 2-year-old little boy loved it as much as I did. There is little more rewarding than making healthy food that the kids love. If you have littles, I strongly suggest having them try this. What a great way to get their fill of nutrients.

I’ve always made my pesto with basil and cilantro because I love the vibrant bold flavors of both the cilantro and the basil. It’s come to my attention that a lot of people aren’t crazy about cilantro. So, if that’s you, substitute spinach for the cilantro and you will have an equally delicious pesto sauce. Also, if you find yourself with one ingredient, but not the other, don’t be afraid to experiment with what you do have. You never know what kind of delicious dishes you might whip up on a whim. If you have time and enjoy cooking, learn to play in the kitchen. It’s my happy place. 🙂
