Raw Vegan Spaghetti

I just love the fact that we can make noodles out of zucchinis. They are such a great vessel for a delicious sauce because, like pasta, zucchinis really don’t taste like much. The blank canvas of the zoodle let’s this Raw Vegan Spaghetti Sauce shine and satisfy every little taste bud that resides on your tongue. Get ready for your mouth to do a happy dance cuz this is a good one. 🙂

First of all, if you don’t have a zoodle maker, there are a couple different kinds available: a handheld tool and a counter-top style. You can click the links below for a closer look.

Spiralizer Style Comparison

I have both styles and tend to use the counter-top style more often than the handheld version. The handheld Spiralizer is easier to clean and can be easily kept in a drawer, while the counter-top Spiralizer is easy to use, super convenient and also fairly easy to clean up. I have almost cut myself on both of them during cleaning, so you need to be cautious about that. Otherwise, they both work great and it’s a personal matter of kitchen space and budget. Either way, you can’t go wrong.

Preparing the Raw Vegan Spaghetti Sauce

Take all of the ingredients, except for the zoodles, and put them into a food processor. I like to use the food processor, rather than a blender, to keep the sauce nice and chunky. If you don’t have a food processor, go ahead and use your blender but don’t run it on high. This Raw Vegan Spaghetti Sauce is so full of flavor, it’s nice to enjoy the tastes of all the separate ingredients rather than having them blended together in a super smooth sauce. Of course, feel free to experiment and find what you like, but I think you’ll agree with me. It’s better chunky. 🙂
